In the heart of the Hautes-Pyrénées,
Philippe Raffié welcomes you within the cordial atmosphere
of the "Auberge des Aryelets" Mr Raffié, head of
cook of the Auberge des Aryelets proposes a creative cook prepared
with fresh products of the west-south french area. He knows how
to mix spices and condiments (especially in the starters) and know
the secret for the preparation of local specialities from the Pyrenees.
Garbure(a Pyrenees soup), navarins of lamb, the magret de canard
with bilberries, the goat cheese with boletus and the basilic in
sheet of Brick, Parmentier of pumpkin with duck (winter), the tomatoes
tarte tatin with and other surprising dishes. The desserts are home
made. The use of condiments like customized mustards (nut-pepper),
the mashed basilic tapenade, various chutneys make it possible to
the customers to discover original savours and associations for
the happiness of the palate.
The menus are modified at the two principal seasons in the mountains
(summer and winter). After a good meal at the Auberge des Aryelets,
it is nice to go for a walk in a lovely and preserved mountain landscape.
